I started baking Paleo after being challenged by some amazing friends. Then I tasted it and thought, "damn this is pretty good." Ever since, I've been doing my best to live a paleo lifestyle—with a sweet treat once in a while. As someone who can't eat dairy and tries to limit carbs, it was an easy adjustment for me.

After getting my hands around the paleo thing, I wanted to branch out into other kinds of alternative baking. I was sick of hearing people say "gluten-free tastes like cardboard." That was challenge #2. My first attempt was a chocolate chip cookie, of course. My two kids (aka guinea pigs), couldn't tell the difference. It was a hop, skip, and a jump from there to baking vegan and the rest is history.
